I’m always looking for healthy meal inspiration – especially if it’s quick and easy with minimum clean up.
Last week I made this salmon and veggie tray bake for dinner – yum!
It took 5 minutes to prep then 15 – 20 min in the oven.
Dinner done within 25 minutes and clean up was done in two minutes!
2 salmon fillets skin off
2 bunches asparagus
1 punnet cherry tomatoes
1 zucchini thinly sliced
Goats cheese – I love Meredith Dairy (You could also use feta cheese – yum!)
Salt and Pepper
Fresh lemon cheeks to serve
- Heat oven to 175 degrees
- Line a baking tray with baking paper
- Wash veggies, taking the ends off the asparagus (if you gently bend the ends they will break off)
- Place salmon fillets and veggies on tray, drizzle with EVOO and salt and pepper
- Dollop cheese over tray
- Bake for 15 – 20 minutes
- Serve with lemon cheeks
