I’m rubbish at meal planning.
I only seem to be able to plan two nights ahead and after that, I’m back at the shops buying groceries again.
It’s not the most efficient way to plan the weekly family meals, and I’m really hoping to get much better at planning ahead this year.
My girls love raw veggies, so during Summer I tend to do a slight variation of the same thing.
Cherry tomatoes, corn, cucumber, snow peas, boiled eggs, carrots, avocado, edamame – then I’ll add grilled chicken or fish or pasta to go with it.
It’s not very exciting – but it works, is super healthy and my girls love it (and it’s easy for Mummy! Yay!).
For hubby and I, we have our favourites on high rotation.
Some of my go to recipes are:
Prawn, Mango and Avocado Salad
Coconut Poached Salmon with Mango Salsa and Asparagus
Curried Pumpkin and Coconut Soup
Roast Veggie Cous Cous with Feta and Lamb Steaks (I often make the salad on it’s own for lunch with quinoa)

And if all else fails and I need a healthy meal with the minimum of fuss, I have discovered THE most fantastic The Little Feast Company which are hand made, wholesome, child friendly meals that provide total convenience without sacrificing quality.
All you have to do is pop them in the oven – and enjoy time out of the kitchen while dinner is bubbling away!

With my shifts at work varying from 5.30am starts to 9.30pm finishes my meal planning is all over the place. Sometimes I have to skip breakfast or lunch, or end up eating a sandwich for dinner! I would love to get back on track with some already made meals that I can enjoy xx
