Some weeks it’s SUCH a chore coming up with healthy, easy meals that the whole family will love and won’t take too long to prep or clean up afterwards.
I’m always on the lookout for fab meal ideas, these are my five faves right now:
This is a delicious Donna Hay recipe, if your kids aren’t quite up to eating rice paper rolls – you can simply serve a deconstructed version. I cannot wait to give this one a go, so fresh and delicious.
When the weather starts to warm up, I love eating loads of fresh salads full of flavour – this one looks amazing and super simple.
YUM! This is one of my favourite Bill Granger recipes, it’s so delicious and quick and easy to make as you marinate the beef and prepare the relish ahead of time. If you’re making it for the whole family, you can simply serve the beef with brown rice and snow peas with perhaps a few cherry tomatoes for garnish for the little ones.
I’m such a big fan of cooking as simply as possible, so your food tastes delicious, is jam packed full of nutrients – and if there’s hardly any clean up afterwards – even better!
This is a Jamie Oliver recipe that my family love, it’s so fresh and crunchy and tasty – I use a little less chilli for the girls, or prepare a deconstructed version.
This is my own version of Spanakopita, it’s so yummy and I’ve had lots of blog friends make it and tell me they love it too! It’s perfect for a busy week as you can make it ahead of time and even freeze it, then all you have to do at meal time is warm, smile and serve. Too easy! Best served with a Yummy Greek Salad.
