I adore Easter. Such a beautiful time of year to spend with family and friends.
And let’s not even get started on all the delicious treats.
Hot Cross buns. Easter Eggs.
And of course, Easter baking.
I recently made an Easter version of my Bill Granger Rainbow Cookies by simply adding a Cadbury Mini Egg on top of the cookies before baking – instant Easter Cookies! Too easy.
If you’re not a big fan of baking, these are super fast and easy. Ten minutes prep time, ten minutes in the oven and you can enjoy your Easter Cookies within half an hour.
You can even get the kids to help! Ava loves helping measure, mix and roll these yummy cookies.
I also love cupcake baking and decorating this time of year.
It’s a fun Easter activity for the kids, set up a bowl of icing along with bowls of yummy Easter treats and let the kids go crazy!
Here are a couple of fun decorating ideas:
Cadbury Mini Egg nest: Simply add a few colourful Cadbury Mini Eggs on top of the icing.
Cadbury Mini Egg with Toasted Coconut: This looks like a cute little birds nest. I toasted the shredded coconut in a non stick fry pan until it was golden brown. YUM!
Cadbury Mini Eggs with a Cadbury Flake Nest: I was always a fan of the good old Cadbury flake, and this is another delicious decorating idea.
