I’ve really enjoyed coming up with ideas on how to make lunch boxes healthy, colourful and fun. Not only does it make lunch time more exciting for our kids, but it makes it more interesting for us too!
In todays lunch box I want to highlight how simple, fresh ingredients can be really appealing, fun and delicious for little ones.
My girls (and hubby!) love fresh corn on the cob, and I often keep them in the fridge ready to go as a crunchy snack.
What’s in the lunchbox?
Sushi sandwich with light cream cheese, mashed avocado (with a squeeze of lemon) and grated carrot on rye
Corn on the cob
To make the sushi sandwich, cut the crusts off two slices of bread. Slightly overlap them and roll out with a rolling pin. Add a layer of cream cheese, mashed avocado then grated carrot. Roll and slice!
