My girls LOVE eggs and I love that they’re a great source of protein, along with vitamin A, B5, B12, B2, phosphorous and selenium.
I boil half a dozen local, free range eggs at a time and keep them in the fridge ready to have as snacks or part of a tasting plate at meal time. Ava loves shelling them, it gives her a little activity to do and then she gets to enjoy her egg.
I really love egg molds where you can pop a shelled, freshly boiled egg (still warm) into a mold and shape it into a star, heart or even a bird – it makes lunch box making more fun for me and Ava thinks it’s amazing! (It’s so much easier than it looks!).
What’s in the lunch box?
Organic Corn Thins with cheddar cheese, a ham star and tomato slice
Strawberries, grapes and blueberries
A star boiled egg (this can be made the night before)
