One of the bonuses about having a Greek hubby is Greek food. Family catch ups are heaven with so many delicious dishes on offer and spinach pie or ‘Spanakopita’ is one of my faves. A little slice of the Greek Islands on a plate. It can be made ahead of time, ready to be served warm as a snack or with a delicious Greek salad at meal time. My girls love it too! Thanks to my mother in law for passing on this recipe to me from ‘A Taste of Greece’, which I’ve adapted slightly.
1 cup cooked rice (I used a Sunrice Brown Rice & Chia Pouch)
2 onions, finely chopped
1 bunch silver beet
Half a bunch mint finely chopped
1 packet puff pastry (you only need two sheets)
1/3 cup olive oil
4 eggs (keep a little of the egg to use to brush the pastry at the end)
75 grams grated cheddar
100 grams feta cheese (I use Dodoni)
125 grams ricotta
1/2 teaspoon nutmeg
Salt and pepper to taste
1) Wash silverbeet, removing the hard stem and chop into small pieces. Mix all ingredients together well.
2) Grease an ovenproof dish 25cm x 25cm, and place one layer of puff pastry on the bottom
3) Place mixture on top and level out, place remaining puff pastry layer on top and brush with the remaining beaten egg
4) Place in a 175 degree oven for twenty minutes, or until brown and flaky on top
