YUM! I’ve been making milk chocolate Rocky Road for a few years now, it’s always a big hit with friends and family and at Christmas I often make it to give as gifts in a beautiful jar. This Christmas I wanted to try a white chocolate version and I’m delighted with how it turned out. The pistachios and cranberries make it very festive indeed! Making this Christmas Rocky Road would be a fun activity with your kids as it’s super easy, pop on some Christmas carols and away you go. It would make a beautifully delicious gift for teachers, work colleagues, family and friends.
1 x 85 g natural pistachios
8 x pink marshmallows
85 grams dried cranberries (half a packet)
3 x packets Lindt 100g Extra silky White Chocolate
Optional: Macadamia nuts
1) Chop marshmallows into a bowl, then add pistachios and cranberries
2) Melt chocolate slowly in a microwave or over a bowl of water on the stove
3) Add melted chocolate to bowl, mix well and pour into a small tray lined with baking paper
4) Once set, chop into bite sized pieces
