You can’t go past a good Greek salad made with fresh, sun ripened tomatoes. YUM! It always takes me back to the Greek islands where they serve salad so simply, with a slab of feta on top and it’s the best thing you’ve ever tasted. I’ve been making this salad for the last few years and it’s always a big hit with friends and family. It’s fresh and full of flavour, and you can play around with the ingredients. My hubby and I aren’t big fans of olives, so I leave them out and add more feta. I usually make a deconstructed version of this for my girls at dinner time, and serve with grilled chicken with lemon and oregano.
8 ripe tomatoes, coarsely cut
1 continental cucumber, peeled, deseeded and rustic cut
1/4 small red onion, thinly sliced
1/2 green capsicum, thinly sliced
200 g marinated kalamata olives (I leave them out)
50 grams feta (Dodoni) – I add loads more!
1 pinch dried oregano
1 pinch salt
Olive oil to taste
Red wine vinegar to taste
1. Pop tomatoes, cucumber, onion, capsicum, olives and olive oil together
2. Arrange in a salad bowl and top with crumbled feta and sprinkle with crumbled feta
3. Dress with olive oil and red wine vinegar
