Ava loves ice cream and asks for one after dinner every night. For the past few weeks I’ve been giving her mini frozen yoghurts, but decided to make her fruit salad icy poles as a healthier and more cost effective alternative. They are SO delicious and Ava loved her special treat, I can’t wait to play around with different recipes this Summer! This is also a fun activity to do with the kids and would make a fantastic gift. All you need to get started is a set of icy pole molds which you can find here.
You can use any kind of seasonal fruit. I used:
2 x kiwi fruit
1 x mango
8 x strawberries cut in half
Handful of blueberries
1) Wash and chop fruit
2) Pop the fruit into the molds, pressing it up against the side of the molds for best presentation
3) Fill the molds right up to the top with juice
4) Freeze for at least 4 hours, ideally overnight
5) When you’re ready to eat your icy pole, run some warm water over the mold first to make it easier to slide out
