Me with Louise and her little man
Today my gorgeous friend Louise is sharing a new healthy and yummy recipe creation with us. Amazingly we fell pregnant at the same time; our children are two weeks apart and are little best friends! Louise is an incredibly passionate and motivated personal trainer and has set up her business Baby Steps PT for people of all fitness levels. Head on over and say hi at her new Facebook page here.
Ingredients
1 cup of Cous Cous (serves 2)
1 zucchini
1/2 Japanese pumpkin
1/2 red onion
1 red capsicum
Fresh mint
Feta
Cherry tomatoes
2 x lamb steaks
Balsamic vinegar
Olive oil
Method:
Boil 1 cup of water. Once it has come to the boil pour in cous cous with 2 teaspoons of olive oil and a sprinkle of salt. Once it has cooked, drain and keep to the side and let it cool, then fluff with a fork.
Roast zucchini, capsicum, onion and pumpkin in baking tray with olive oil and balsamic vinegar drizzled on top. Bake at 150 degrees for 45 mins.
Let veggies cool before tossing through the cous cous. Add finely chopped mint, cherry tomatoes (halved) and crumble feta on top of the salad.
Serve with grilled lamb steaks and a drizzle of Greek yoghurt!

Have tried this recipe and it is really great! It is equally as good with fish or if you want total veg it is fantastic with sliced butternut roasted plain and then stack the rest of the ingredients on and drizzle the yoghurt around the plate. Add toasted pinenuts or almonds and it looks very master chef!

That sounds delicious! I love cous cous salads – so perfect & light for summer but still quite filling. Although I’d serve mine with some crumbed tofu slices instead of the lamb because I’m veggo 🙂 xx
