I LOVE chocolate. It’s one thing I could never give up, but I’m always interested in finding healthier versions of my favourite things. This choc-chia pudding is amazingly sugar free, takes just two minutes to whip up and after 1 or 2 hours in the fridge, it’s ready to be enjoyed.
I posted this pic on Instagram last week and had so many people ask me for the recipe, so here it is!
Many thanks to my amazing little sous chef Ava who helped me me measure and mix all the ingredients together. It’s so much fun working side by side in the kitchen with my gorgeous little girl.
This recipe is a slight adaptation from the Woolworths Fresh Magazine
400ml light coconut cream
2/3 cup sugar free drinking chocolate (I used Vitarium Du Chocolat)
2/3 cup white chia seeds
2 tbs rice malt syrup
2 tbs flaked almonds
natural yoghurt to serve
strawberries to serve
1) Whisk coconut cream, chia seeds and syrup in a bowl to combine
2) Spoon evenly between 4 x 1/2 cup glasses or containers. Empty jars are perfect for this!
3) Cover and chill for 1- 2 hours. Top with natural yoghurt, flaked almonds and fresh strawberries
